Curried Quinoa Salad







I've been working so much lately that keeping these grain salads in the refrigerator has been more helpful than I ever would have thought! This is a simple Quinoa salad, the first of many I'm sure. I enjoyed this over a bed of baby spinach for dinner every night this week!










Ingredients:
1 C Quinoa
3 C Water
1 Carrot, Grated
2 Green Onions, thinly sliced
1 C Cherry Tomatoes, halved
2 Tbsp. Olive Oil
3 Tbsp. Lemon Juice, fresh squeezed
2 tsp. Curry Powder
1/2 tsp. Salt
1/4 tsp. Ground Pepper
1 Clove Garlic

Process:

Cook Quinoa:
Rinse the Quinoa until the water runs clear.
Put Quinoa in a pot with 3 C water and simmer until tender, about 15-20 minutes

While the Quinoa is cooking..

Make The Dressing:
In a small bowl add the olive oil, lemon juice, curry powder, salt, and pepper. Press the clove of garlic into the bowl and whisk to incorporate the ingredients.

When the Quinoa has cooled, add the carrots, green onions, and cherry tomatoes.

Pour the dressing over the salad and toss to distribute the dressing evenly.

Store in the refrigerator in an airtight container.
