Farro's Garden






Farro is a pretty cool grain, This was my first time using it and I'm very excited about the results and the possibilities. It cooks up to a great size for a cold salad and has a subtle nutty flavor. This salad is really just a bunch of things I like thrown into a bowl, but it's definitely something I'm happy to eat several days in a row.









Ingredients:
1 C Farro
1 C Cherry or Grape Tomatoes, Halved
1/3 C Sweet Onion, diced
1 C Flat Leaf Parsley, chopped
3 Cloves Garlic, pressed
2 Tbsp. Olive Oil
2 Tbsp. Balsamic Vinegar

Process:
Farro: soak the grains in water for 25 minutes, drain. Add 2 3/4 C water and 1/4 tsp. salt. Simmer uncovered for 25 minutes. When finished, cool the grains before putting the salad together, if you're impatient you can easily achieve this by running them under cool water.

Add the tomatoes, onion and parsley to the farro.
Mix to incorporate.

In a small bowl measure out the olive oil and vinegar. Using a garlic press, add the garlic to the bowl and whisk until all ingredients are thoroughly combined

Add the dressing to the salad and mix to incorporate.

I really enjoyed this over a bed of baby spinach, but it's great alone too.
