Tequila Lime Chicken






I came up with this for a late summer camping trip, but we were so busy playing in the sun, and already had so much good food, that I never got around to making it.  In what might be an attempt to beat the gray winter days we've been keeping it light and fresh around our house lately and this certainly fit the bill. Pair it up with some Cilantro-Lime Rice or throw it in a tortilla with some grilled onions and peppers for fajitas, either way this is a keeper. It's good out of a pan and it will be spectacular on the grill.








Ingredients:
1/2 C. Tequila
1/2 C. Orange Juice
1 C. Lime Juice, fresh squeezed of course
1 Tbsp. Chili Powder
1 Jalapeno, chopped, include veins and seeds
3 Cloves Garlic, minced or pressed
2 Tsp. Salt
2-4 Chicken Breasts (depending your your need)


Process:
Mix all ingredients except for the chicken in a large Ziploc bag.
Add the chicken, seal the bag, and refrigerate.
Let marinate for at least 6 hours, I let mine sit for 24.

Heat a pan over medium heat, use a little oil if you like but you don't need much. Put chicken breasts in the pan with some of the marinade. Cover and cook for about 6 minutes on each side, or until fully cooked.

I recommend pairing this up with Cilantro-Lime Rice or slicing it up with some grilled vegetables for fajitas.
