Cilantro-Lime Rice





This is a simple and versitile side dish. Put it with anything you like, but I think it goes well with my Tequila Lime Chicken. 







Ingredients:
1 C. White Rice
1 Bunch Cilantro
1 Lime

Process:
Cook the Rice: Bring 2 Cups of water to a full boil. Add the rice and stir. Reduce heat to low, cover, and simmer for 40 minutes or until rice is tender and water is gone. Fluff with a fork and let stand, covered, for an additional 5 minutes.

While the rice is cooking, zest the lime then slice it into wedges. Also wash and chop the cilantro.

Transfer the warm rice to a mixing/serving bowl and add the lime zest, mix to incorporate. This will give a light hint of lime, if you like more lime (as you should) juice the lime wedges into the rice and mix to incorporate. Stir in the cilantro just before serving.
