Greek Rice Salad




In an effort to stick stick to my guns about  keeping quick healthy meals in the refrigerator this awesome brown rice salad was born.










Ingredients:
2 C Brown Rice, Cooked
1 Lemon
5oz Grape Tomatoes
3oz Kalamata Olives
1/4 C Sundried Tomatoes
1/4 Onion
3-4oz. Feta Cheese

Process:

Cook the brown rice: Bring 1 3/4 C water to a boil, add 2 C brown rice. Cover and simmer for 50 minutes.

While the rice cooks, zest the lemon into a small bowl and set aside.
Cut the lemon into wedges and set aside.
Halve the tomatoes and olives and put in a medium bowl.
Chop the sundried tomatoes and onion and add to the tomatoes and olives.

When the rice is finished and still warm add the lemon zest and mix well.
Let the rice cool to somewhere around room temperature, the refrigerator is good for this.
Add the bowl of chopped goods.
Mix to incorporate.
Add the feta cheese, mix to incorporate.
Serve with the lemon wedges, the fresh juice is the only "dressing" you need.
