I know this looks like guacamole, but it's not. It's beans! That's right, I said beans. I'm pretty excited about this super simple edamame bean dip. It's simple and would make an easy throw together item for a potluck or work function.
A Couple of Things: This dip is fairly mild, I recommend considering at least an extra teaspoon of chili sauce and maybe even a bit of fresh lime juice.
Ingredients:
1.5 C Frozen Shelled Edamame, thawed and cooked
16 oz. Can Cannellini (or other white) Beans, drained and rinsed
1/2 C Water
3/4 C Chopped White Onion
4 Tbsp. Chopped Cilantro
3 Tbsp. Rice Vinegar
1 Tbsp. Olive Oil
1/2 Tsp. Salt
Process:
Put all the ingredients into the food processor and run until smooth. Yep, that's it.
Serve immediately or cover and store in the refrigerator.
