Sometimes you just need a taste of summer in the dead of winter. This is a simple corn salsa that you can make with ingredients available year round.
A Couple of things: I would obviously use fresh corn if it were available. I assure you, it was impossible to find in the middle of Janurary.
Frozen Corn (12 oz. bag)
1/2 Onion, diced
1 Jalapeño, diced
1 Bunch Cilantro, washed and chopped
1 Tomato, diced
1 Lime
1/2-1 Tsp. Cayenne Pepper
Process:
Thaw the corn, if you need to speed up this process run it under cool water. Put corn in a medium bowl and add the diced onion, jalapeño, cilantro, and tomato. Squeeze the juice of the lime over the corn mixture, if you have an extra juicy lime start with 1/2 and continue to add juice as needed. Add the Cayenne pepper to taste. Cover and refrigerate until needed.
