You love coconut? You love chocolate? Well then, these are the treats for you!
A Couple of Things:
These are super easy. They make a huge batch (the size of a baking sheet) so plan on sharing! These would likely freeze well for a month or two in an airtight container. This recipe was found on a recipe club website (as in I have no idea who to give credit to) as an "Almond Joy" knockoff, which these really aren't. They're better.
Ingredients:
10 Tbsp. Unsalted Butter
3/4 C. Brown Sugar2 1/2 C. Flour
1/2 Tsp. Salt
28 oz Sweetened Condensed Milk
28 oz Shredded Coconut
1 Tsp. Vanilla Extract
5 C. Dark Chocolate Chips (I used Ghiridelli 60% Cocoa)
Process:
Preheat the oven to 350(F).
Line a baking sheet with foil and coat with vegetable spray.In a small bowl cream the butter and brown sugar until combined.
Add the flour and salt. Mix to combine.
Transfer to the prepared pan and press into an even layer. Bake for 8 minutes.
Cool the pan on a baking rack while preparing the coconut layer.
Pour the condensed milk into a large bowl, add the vanilla and mix.
Add the coconut and mix to coat.
Spread over the crust and bake 20-25 minutes, until it begins to brown.
Melt the chocolate over a double boiler, stirring until melted and smooth.
Pour over the cooked coconut bars and spread into an even layer.
Allow to cool then refrigerate until hardened.
Cut into squares (about 36)
