Rustic Apple Oven Cake
On a lazy New Years day at our friends homestead we lounged around playing games and making all sorts of amazing food. Wonderful for breakfast or dessert, this was the belle of the ball.
Ingredients:
3 Tbsp. Butter, unsalted
1/4 Cup Light Brown Sugar
1/4 Tsp. Cinnamon
1 Large or 2 Small Apples, peeled and sliced
3 Large Eggs
1/4 Tsp. Salt
1/2 Cup Flour
1/2 Cup Milk
1 Tbsp Fresh Lemon Juice
1 Tbsp Powdered Sugar
Process:
Preheat the oven to 425(F).
Melt the butter in a 12" (or so) ovenproof frying pan over high heat.
Add brown sugar and cinnamon, swirling to combine.
Add apple and cook just until they start to soften, 2-4 minutes.
Meanwhile, mix the eggs, salt, flour and milk in the blender.
When apples are done add the egg mixture to the pan and bake until puffed and brown, 15-20 minutes.
Sprinkle with lemon juice and powdered sugar before serving.
