Pumpkin Chocolate Chip Muffins
As I hurried through the grocery store in the early hours of Thanksgiving morning I accidentally grabbed a can of pumpkin pie mix instead of pumpkin puree. I wasn't quite sure what I was going to do with it, but I wanted to use it up before it got lost in the back of the cupboard. Obviously it was time for some wonderfully moist, tasty, muffins.
A Couple of Things:
I pictured a large can of pumpkin pie mix, but this recipe only needs 15oz., which is 1 3/4 C. If you're so inclined, you could top these with some cream cheese frosting and call them cupcakes.
Ingredients:
15 oz. can of Pumpkin Pie Mix (1 3/4 C)
4 Eggs
1/2 C Oil
1/2 C Applesauce
1 tsp Vanilla
1 C Brown Sugar
1 1/2 C Sugar
3 1/2 C Flour
2 Tsp Baking Soda
1 1/2 tsp. Salt
Process:
Preheat the oven to 350 (F)
Combine the brown sugar, sugar, flour, baking soda, and salt in a medium bowl, whisk to mix and set aside.
Mix the pumpkin pie mix, eggs, oil, applesauce and vanilla either by hand or with the mixer.
Slowly mix the dry ingredients into the wet ingredients.
Add the chocolate chips.
Spoon into muffin tins lined with baking cups or lightly greased, fill the cup about 3/4 full.
Bake 35-45 minutes or until a toothpick comes out clean.
